General Comments
Verbal Warning issued for seating beyond Plumbing regulations. When only one public restroom is provided, there can only be seating for 10 or less and this includes all employees. Seating MUST be removed or a $500 fine will be assessed. All food establishments must adhere to the Illinois State Plumbing Code.

Facility is in need of a thorough cleaning. A follow up will occur in approximately 5 days for violations #20, 35, and 41. At this time the seating must be removed, all critical violations corrected and facility cleaned otherwise facilities 2010 food license will be suspended!

Haccp: discussed proper sanitizer concentration.

*20  Observed no sanitizer set up and then when made was too strong. Sanitizers must be set up prior to all food prep and service. The only sanitizers that are approved are bleach, iodine or quat. Bleach sanitizer mixed and was 400PPM + . Sanitizer concentration must be 50-100 ppm. Remixed and tested at 100 ppm. (750.810) Immediate/Onsite
*35  Observed back door not tight fitting. All outside entrances must be self-closing and tight fitting automatically. Back door has to be pulled shut in order for it to be tight fitting. Please repair. (750.1170) 5 Days
*41  Observed cleaning agents stored on shelf next to single service items. Please store all chemicals completely separate from food, food prep areas, food storage areas, food equipment and single service items. Chemicals moved. (750.1310) Immediate/Onsite
Observed items in prep coolers, upright freezers, walk in cooler and walk in freezer not properly labeled. All items must be labeled, time and use by date. All food not properly labeled will be discarded. (750.100) Next Inspection
Observed the following food protection violations: 1. food uncovered in upright freezer, 2. food on floor in walk in freezer, 3. food uncovered in walk in cooler, 4. food stored in open cans (pineapple and cheese sauce) Please store food protected at all times; cover all food, store 6" off the floor and do NOT store any food in metal cans.
